BERRY SALAD with FRIED GOAT CHEESE

This salad is such a fun and delicious way to enjoy the spring flavors! Crispy, creamy fried garlic and herb goat cheese rounds paired with juicy, sweet strawberries over your fav fresh greens, finished with a tangy shallot vinaigrette. Can’t get enough!

INGREDIENTS – serves 2

4oz garlic herb goat cheese, cut into 6 rounds (or plain)

3T flour
1 egg
1/4c breadcrumbs

1/4 shallot, rough chop
1t strawberry jam (or raspberry or blueberry)
2T white balsamic vinegar
2T olive oil

4-6c lettuce
6-8 strawberries, sliced (or 1c raspberries or blueberries)

INSTRUCTIONS

Set up 3 bowls, 1 with flour, 1 egg, 1 breadcrumbs. Sprinkle a little bit of salt and pepper in each and stir to combine. Cover each goat cheese round in flour then egg then breadcrumbs.

Bring a small or medium skillet to medium heat. Add a thick layer of olive oil to the skillet then fry each cheese round on both sides until golden brown, about 3 minutes on each side. Remove to a paper towel lined plate.

In a mini food processor (or cup with an immersion blender), add shallot, jam, balsamic, olive oil and a pinch of salt and pepper. Blend until smooth.

Assemble the salad, plate lettuce on a large plate or bowl, distribute berries and fried goat cheese then drizzle with dressing.
