Spice up your snack time with this super flavorful, high protein app! Saucy, slightly sweet and spicy middle eastern-inspired ground chicken over creamy whipped feta. A perfect flavor combination scooped up on a toasty warm pita. Delicious!
INGREDIENTS – serves 2-6
1c greek yogurt
1/2 lemon juice
1/8t garlic powder
2oz feta, crumbled
2T olive oil
1/2lb ground chicken (or any other ground meat)
1/4 onion, chopped
1t garlic powder
1/2t coriander
1/2t cumin
1/2t aleppo pepper
1/4t turmeric
1/4t salt
1/4t black pepper
1/8-1/4t red pepper flakes
1 roma tomato, chopped
1/2c pomegranate juice
2t maple syrup
Fresh dill
INSTRUCTIONS
Dump greek yogurt, lemon juice, 1/8t garlic powder and feta in a food processor. Puree until smooth. Set aside.
Bring a large skillet to medium-med-high heat. Saute onion in olive oil until its starting to become transparent then add chicken with a small pinch of salt. Break it apart, letting it cook about halfway then stir in spices. Cook for another minute then stir in tomatoes. Let those break down for another minute then pour in pomegranate juice and maple. Stir, reduce heat to medium-med-low and let simmer until the juice thickens up and coats all the chicken and tomatoes.
Pour whipped feta on the bottom of a large plate. Spoon pomegranate chicken over the top. Serve with warm pita and cucumbers.
