Salty sweet perfection. Chewy, rich, chocolatey cookie coated in chopped peanuts and finished with a little sea salt. Freaking delicious!
INGREDIENTS – makes about 40
1c butter, room temp
1 1/2c sugar
3 eggs, room temp
1t vanilla
1 1/2c flour
3/4c cocoa powder
1t baking soda
1/8t salt
2 1/4c peanuts, chopped pretty fine (separated 1c / 1 1/4c)
INSTRUCTIONS
Preheat oven to 375°F.
Beat butter and sugar together until light pale yellow and creamy, about 10 minutes. Add vanilla and eggs, continue to beat until smooth and fluffy.
Sift together the flour, cocoa, baking soda and salt, then pour into the butter mixture and stir until about halfway combined then add 1c peanuts and finishing stirring until the batter is full combined. Pour the remaining 1 1/4c peanuts in a bowl.
Using a 1″ cookie scoop, plop a scoop of dough directly in the peanut bowl. Carefully coat the dough in peanuts. Its is pretty delicate so I like to swirl the bowl around to let the dough ball roll itself and sprinkle peanuts over it the top to coat and spots that get missed. Gently pick up the ball and place on a parchment lined baking sheet about 3-4″ apart. Sprinkle with a little seat salt then bake for 8 minutes,
