Eggplant, zucchini, bell pepper and red onion seasoned up with garlic, oregano and aleppo pepper and roasted til just tender and served over a big smear of hummus and fresh greens with a squeeze of lemon and pinch of dill. Flavorful, healthy and delicious. Love it!

INGREDIENTS – serves 2-3

1 small eggplant, 1″ cubes
1 red bell pepper, 1″ chunks
1 medium zucchini, 1/2″ sticks
1 red onion, 1/2″ slices
1/4t salt
1/4t oregano
1/4t garlic powder
1/4t aleppo pepper

1/2 lemon, wedges
4-6c greens
2c hummus

Optional: pita, feta, dill


Preheat oven to 375°F. Put eggplant, bell pepper, zucchini and red onion on a baking sheet, sprinkle with salt, oregano, garlic powder and aleppo and drizzle with olive oil then toss to coat. Spread the veg out evenly on the baking sheet and roast for 20-25 minutes. Allow to cool for just a bit before serving.

To plate: Place a big scoop of hummus on a plate, smear it around a bit, add a big handful of greens, then a scoop of veg. Sprinkle on some dill and squeeze a little lemon juice over the top then serve.
