Chicken breast cutlets marinaded in a garlic, cumin, lime dressing, grilled to perfection then topped with a super fresh and simple mango, avocado and green onion salsa. This bright and delicious dinner is just what you’re looking for!

INGREDIENTS – serves 2

2 limes, zested and juiced (plus 1 more for the salsa)
1 1/2t garlic powder
1/4t cumin
1/4t salt
1/4t black pepper
Pinch red pepper flakes
1/4c olive oil
1 large chicken breast, butterflied in 2

1 mango, small cubed
1 avocado, small cubed
1-2 green onions, chopped
1 lime, juiced
Small pinch of salt

Cabbage, shredded – optional


Whisk together lime zest, juice, garlic powder, cumin, salt, pepper, pepper flakes and olive oil then pour over chicken in a bowl or dish to marinate for 1-2 hours covered, make sure the chicken is completely coated.

In a separate bowl, combine mango, avocado, green onions, lime juice and salt, gently stir it together so you don’t mash up the avocado too much. Set aside or refrigerate until serving.

Preheat your grill to med-high heat (about 400). Grill on each side for about 5 minutes then let rest for another 5 minutes.

Plate over rice with cabbage and lots of mango avocado salsa.
