Chicken thighs simmered in an incredible sagey, cranberry, dijon sauce. Tender, saucy chicken thighs so full of flavor you’ll be licking the plate clean!
INGREDIENTS – serves 2-3
2T olive oil
4 chicken thighs, bone-in or boneless
1/2 onion, chopped
1t sage
1/4t thyme
1/4t garlic powder
Pinch red pepper flakes, to taste
3/4c broth
3T dijon mustard
1/3c dried cranberries
INSTRUCTION
Bring a large skillet to medium-med-high heat. Sprinkle chicken thighs with salt and pepper on both sides then sear on both sides for 7-8 minutes (4-5 if using boneless) then remove to a plate for a minute. Reduce the heat to medium then add onion to the pan with a pinch of salt, stir and cook for about 2 minutes. Sprinkle in sage, thyme, garlic powder and red pepper flakes, stir then cook until fragrant. Pour in broth then stir in the dijon and cranberries. Bring to a simmer then place the thighs back in the sauce. Top with a lid and simmer for 25 minutes (15 if using boneless).
