ROASTED POBLANO SALSA

A fun seasonal twist on classic salsa. Fresh tomatoes, poblano pepper, jalapeño and red onion seasoned up then roasted until super soft and charred. The veg then gets pureed with a little lime juice into an incredibly flavorful salsa that will impress all your friends!

INGREDIENTS

2 medium tomatoes, quartered
1 poblano, halved, seeds and stem removed
1 jalapeño, halved, seeds and stem removed
1/2 red onion, cut in half
1/4t salt, to taste
1/4t cumin
1/4t smoked paprika
1/4t garlic powder
2T olive oil

1/2 lime, juiced or more if you like it tangy

INSTRUCTIONS

Preheat oven to 425°F. On a parchment lined baking sheet, toss tomatoes, poblano and red onion in salt, cumin, smoked paprika, garlic powder and olive oil. Flip all the pieces cut side down, spread them out then roast for 30 minutes.

Allow to cool a bit then dump everything into a food processor or blender and pulse until it hits your desired salsa texture, salt a little if necessary then serve.
