ROASTED PORK TENDERLOIN with ROASTED VEGETABLES

Pork tenderloin smothered in garlic, lemon zest and thyme roasted to perfection alongside potatoes and carrots. A simple one pan meal that is totally filled with flavor. Can’t get enough!

INGREDIENTS – serves 2

1/2 pork tenderloin
1 garlic clove, grated
1 lemon, zested
1/4t thyme
1/8t salt
1/8t pepper
1/4t red pepper flakes
3T olive oil
3 yukon gold potatoes, 1″ chop
2 large carrots, 1″ chop

INSTRUCTIONS

Preheat oven to 400°F.

Pat the tenderloin dry with a paper towel. In a small bowl, stir together garlic, lemon zest, thyme, salt, pepper, pepper flakes and 1T olive oil. Spoon the mixture over the tenderloin making sure it was coated completely.

Dump the potatoes and carrots on a large parchment lined baking sheet. Drizzle in 2T olive oil and sprinkle with salt and pepper, toss to coat. Spread them out evenly, leaving a hole in the middle for the tenderloin. Roast for 25-30 minutes.
