GARDEN TOMATO SAUCE

Tomato season is in full swing and I am making sauce left and right to keep up with all these tomatoes. My favorite sauce is the simplest to make and is so incredibly flavorful.

INGREDIENTS – serves 2-3

3T olive oil
2 lbs fresh tomatoes, cherries can be whole but I would chop up a little
3-4 garlic cloves
1 parmesan rind
2 big sprigs of basil
4-6 sprigs of thyme
1/4t salt
1/4t red pepper flakes

INSTRUCTIONS

Add all of the ingredients to a large pot, stir, bring to a simmer on med-low heat, cover with a lid and allow to cook or about an hour or two, stirring occasionally.

Remove the parmesan rind and the stems from the basil and thyme. Blend if you’d like it smooth or leave it chunky.
