CAPRESE PIZZA

Gooey melted mozzarella, juicy tomatoes and fresh basil atop a crisp garlicky crust. This pizza is classic perfection.

INGREDIENTS

1 pizza dough, room temp, either from the supermarket deli or give my recipe a try

2T olive oil
1 garlic clove, grated
6-8 cherry tomatoes, halved
1 fresh mozzarella balls, sliced (or 2 bocconcini)

1/4c basil, julienned

INSTRUCTIONS

Preheat oven to 500°F with your pizza stone inside. Heavily sprinkle a pizza peel with semolina or cornmeal. Stretch dough in a big circle and place on top of the semolina, give the peel a little shake to know that the dough isn’t sticking. If you don’t have a pizza stone just line a baking sheet with parchment and stretch your dough out in a circle on there.

Drizzle dough with olive oil then grate on the garlic. Brush the oil and garlic all over the crust then top with tomatoes and mozzarella. Sprinkle with a little salt then bake for 8-12 minutes, until nice and crisp.

Finish with a good sprinkling of basil.
