A recreation of a recipe I made with my grandma as a kid that made me totally fall in love with green beans. A quick blanch then let em marinade in the fridge for a few hours in this sweet and sour, garlicky vinaigrette. Super simple and great for summertime BBQs!
INGREDIENTS – serves 2-4
2-4 big handfuls green beans, trimmed
1/4c red wine vinegar
1T maple syrup
1 garlic clove, grated/minced
Pinch red pepper flakes
Salt and pepper
1/4c olive oil
INSTRUCTIONS
Bring a medium or large pot of water to boil. Blanch the green beans by cooking them in the boiling water for 1-2 minutes then plunging them in a big bowl of ice water. Place the green beans in a storage container and set aside.
Make the marinade. Whisk together vinegar, maple, garlic, pepper flakes and olive oil with a pinch of salt and pepper then pour over the green beans. Cover with a lid and refrigerate for at least an hour, up to overnight.
