PEACH + COCONUT CRISP FOR 2

Perfect for a summertime date night at home. Soft juicy peaches, baked with maple, cinnamon and allspice topped with buttery, crispy oats and coconut. All you need is a little scoop of vanilla ice cream and you are in PARADISE!

INGREDIENTS – serves 2

1-10oz package frozen peaches (or 2 heaping cups)
2T maple syrup
1/2t vanilla
1/4t cinnamon
Pinch allspice

1/3c oats
1/4c coconut flakes
1/8t salt
2T butter, small cubes

INSTRUCTIONS

Preheat oven to 375°F. In a small bowl, toss the peaches in maple syrup, vanilla, cinnamon and allspice then pour into an 8″ skillet or small baking dish. In the same bowl, combine oats, coconut and salt. Add cubed butter and cut into the oat mixture (I use my hands and smush the butter into the mixture, you don’t have to do that great a job) be sure to leave some chunks of butter. Sprinkle the oat mixture over the peaches, lightly cover in foil and bake for 35 minutes (25 minutes if your using a baking dish), remove the foil and bake for another 10-15 minutes until golden brown on top.
