This salad is bright, fresh and tastes like summer! Strawberries and lime juice blended up to make a vibrant dressing. Grilled chicken, corn and green onions paired with sliced strawberries over your favorite greens. So flavorful and so refreshing!
INGREDIENTS – serves 2
1 chicken breast, butterflied in 2
1 green onion bundle
1 ear of corn, husks removed
10-12 medium strawberries
1 lime, juice
3T olive oil
Preheat a grill or grill pan to medium. Salt and pepper both sides of the chicken cutlets, drizzle with a little olive oil and grill for 3-5 minutes per side, until cooked through. Grill the corn and green onion while your at it. Rotate the corn every 5 minutes until charred and cooked all the way around. Grill the green onions just enough to get nice grill marks on 2 sides.
Meanwhile, chop up 4 of the strawberries and add them to a food processor (I like to use my mini prep here). Squeeze in the juice of a lime then pour in the honey and olive oil with a pinch of salt and pepper. Blend until smooth. Set aside.
Allow the chicken, corn and green onions time to rest and cool down a bit then chop up the chicken and green onions and remove the corn from the cob. Slice up the remaining strawberries. In a large bowl, top the greens with all the fixins. Drizzle with dressing.
