A sweet and sticky orange sesame sauce infused with lots of garlic and ginger then simmered with lightly charred broccoli, chickpeas and a ton of sesame seeds. This incredibly flavorful vegetarian meal is not only delicious but also comes together in less time than it takes for the rice cook.

INGREDIENTS – serves 2

2T sesame oil
2c broccoli florets, small
1 orange, juice and zest
2 garlic cloves, grated
1-2t fresh ginger, grated
1T rice vinegar
1T soy sauce or tamari
2T honey
1t cornstarch
1 1/2c chickpeas or 1 can drained
2T sesame seeds

In a bowl, stir together orange juice, zest, garlic, ginger, vinegar, soy sauce and honey. Don’t worry about dissolving the honey perfectly it will blend in when it hits the heat. Whisk in cornstarch then set aside.

Saute broccoli in sesame oil on med-high heat for about 2 minutes, until charred. Pour in the orange juice mixture, stirring until the sauce is nice and uniform and really bubbly. Add chickpeas, stir to coat then cook for about a minute to warm them up and thicken the sauce. Stir in the sesame seeds then serve over rice.
