Spicy, sweet and the easiest to make, this weeknight dinner is one of our absolute favorites! Just mix everything together in a baking dish then stir in the chicken breast and mushrooms. Let it marinate for a bit then right in the oven it goes. So much flavor!
INGREDIENTS – serves 2
1/4t salt
1/4t black pepper
1/2t red pepper flake
1/2t thyme
1/2t garlic powder
1/4c balsamic vinegar
1T maple syrup
2T olive oil
1 chicken breast, cut into 1-2″ chunks
10 baby portobellos, 1/4’d
INSTRUCTIONS
In a 8×8 (or 9×9) baking dish, whisk together salt, pepper, red pepper flakes, thyme, garlic powder, balsamic, maple and olive oil. Add the chicken and mushrooms then stir to coat. Allow to marinate for 30 minutes.
Preheat oven to 400°F.
Give the chicken and mushrooms one more stir to coat then bake for 30 minutes.
I like to serve this over pasta, polenta, mashed potatoes, anything that’ll soak up that extra sauce!
