Tender spiced delicata topped with gooey melted blue cheese and tart dried cranberries, finished with crunchy chopped pistachios. This elegant appetizer is perfect for any holiday party and comes together in no time. Your guest are gonna rave!
1 delicata squash, seeded/1-2″ chunks
2T olive oil
1/4t garlic powder
1/4t aleppo pepper (sub pinch of red pepper flakes)
1/3c blue cheese, crumbles (sub brie)
1/3c dried cranberries
1/3c chopped pistachios
Preheat oven to 400°F. Toss delicata in olive oil, salt, pepper, garlic powder, sage and aleppo pepper. Scatter the pieces, skin side down, on a parchment lined baking sheet. Roast for 15-20 minutes, until soft when poked with a fork. Top each with a little pinch of blue cheese then put them back in the oven for 2 minutes until the cheese has melted just a touch. Finish with cranberries and pistachios then serve.
