Orange zest, garlic and prosciutto make simple chicken breast a star in this showstopping main that is both absolutely delicious and incredibly easy to make.
INGREDIENTS – serves 2
1 chicken breast, butterflied in half
2T olive oil
1 orange, zested
1-2 garlic cloves, minced (I use the microplane)
1/8t salt
1/8t pepper
1/8t thyme
1/8t cardamom
2 slices prosciutto
INSTRUCTIONS
Preheat oven 375°F. Place chicken on a foil lined baking sheet. (Make sure to use a baking sheet that has a little lip around the edge so any extra grease from the prosciutto doesn’t drip into your oven)
In a small bowl, mix together olive oil, orange zest, garlic, salt, pepper, thyme and cardamom. Brush both sides of the chicken with the olive oil mixture then top each with a slice of prosciutto, tucking any extra edges under the chicken. Roast for 18 minutes then switch to broil for 2 more minutes.
