CHERRY BERRY LEMON MUFFINS W/ MAPLE YOGURT FROSTING

Hints of lemon bring out the best in these cherries and blueberries, making for a delicious, low sugar, springtime sweet treat! Top them with some maple greek yogurt and its a party! These are so bright, happy and healthy-ish!

INGREDIENTS

1 1/4c flour
6T sugar
1/2c oats
1T chia seeds – optional
2t baking powder
1/2t salt
1 lemon, zested and juiced
1c milk
1 egg
1/4c butter, melted
2c cherries and/or blueberries, frozen or fresh

1 1/2c greek yogurt
1T maple syrup

INSTRUCTIONS

Preheat oven to 425°F.  Stir together flour, sugar, oats, chia, baking powder, salt and lemon zest. In a separate bowl, whisk eggs, milk and lemon juice together then pour into dry ingredients. Stir until just incorporated.  Scoop into 12 muffins and evenly distribute the cherries and berries into the muffins.  Put in the oven then reduce the temperature to 375°F and bake for 15-18 minutes. Allow to cool.

Whisk together greek yogurt and maple then scoop on top of a muffin. Just top them as you eat them or the muffins will get soggy.
