PEANUT BUTTER BANANA PANCAKES

Hearty, fluffy, and topped with the classic PB + banana combo to help make breakfast stick with you all day long. Last weekend, we snuck away for a little river camping trip and it was everything we needed. We usually end up hiking + fishing into the afternoon and have a really late lunch so making sure that our breakfast will stick with us until then is super important.

INGREDIENTS

1c flour
3T wheat bran or germ – optional
1/2t salt
1/2t baking powder
1/2t baking soda
2T powdered milk
2t flax seeds – optional
2t ground flax seeds – optional
2t chia seeds – optional
1 egg
1/4c flavorless oil (I used grapeseed)
1c water

2-3 bananas, chopped
Peanut butter
Maple syrup

INSTRUCTIONS

Pour flour, wheat bran, salt, baking powder, baking soda, powdered milk, and seeds in a mason jar, shake to combine. When we’re camping, I store it at this point then add the egg, oil and water at the campsite, put on the lid, shake vigorously, then pour directly on the pan. Top with bananas, peanut butter and maple syrup.
