MAC + CHEESE W/ BROCCOLI + BEANS

We all have those days where lunchtime rolls around and BAM, you are ravenous. And there’s about 15 minutes to save yourself from complete lunchtime destruction. This is our go-to meal and I’m not going to lie, we have this at least every other week but when you boost the nutrition up with some broccoli, white beans and greek yogurt, theres nothing to feel guilty for.

INGREDIENTS

1 box Annie’s mac and cheese
1 broccoli stalk, florets chopped and stem peeled and chopped
1T butter
3T milk
1/3c greek yogurt
1 1/2c white beans, cooked or drained can – make your own here
1/2t black pepper

INSTRUCTIONS

Bring a pot of heavily salted water to boil. Pour in pasta and broccoli, cook for 8 – 10 minutes until pasta is cooked through, stir occasionally. Drain pasta and return empty pot to the stove on low-med-low. Add butter, milk and yogurt to the pot and stir. When melted, turn off the heat and dump in the cheese packet and stir until homogenous. Return pasta and broccoli to the pot then add the white beans and black pepper. Stir and serve.
