BUFFALO WHITE BEAN BURGER

All that spicy buffalo flavor + melty blue cheese + ranch WITHOUT. THE. MEAT. This is the perfect meal to introduce a meat lover to Meatless Monday because it still hits all those salty, savory, umami notes we all know and love. It’s also an easy meal to prep ahead of time, then cook when you’re ready.

INGREDIENTS

Burger:
1/2 red onion, finely chopped
6 crimini mushrooms, finely chopped
1/4c carrot, finely chopped (don’t have carrots? swap for celery or omit)
1/4c celery, finely chopped (don’t have celery? swap for carrot or omit)
1 garlic clove, minced
1t soy sauce
2T buffalo sauce (1 1/2T hot sauce + 1/2T melted butter)
1.5c cooked white beans/1 can drained – make your own here
1T whole wheat flour
More buffalo sauce – optional
Crumbled blue cheese of choice (I used gorgonzola)

Lettuce
Ranch – optional – make your own here (Avocado Herb)
More buffalo sauce – optional

INSTRUCTIONS

Saute onion, mushrooms, carrot and celery in olive oil with a really small pinch of salt. When soft, add garlic, cook until fragrant. Pour in soy sauce and buffalo sauce, stir then add beans. When the liquid is gone, turn off the heat and use a potato masher to mash the beans to your desired texture. Sprinkle flour over and stir to combine. It’ll get pretty thick. Allow it to cool to the touch and form into 4 patties. (MEAL PREP: once you’ve formed the patties separate them with parchment paper and store in the fridge in an airtight container). Cook for 2-3 min on each side in a skillet, add cheese (if you want) after the flip and put a lid on top to melt it.

TIP: use a soft bun and don’t use a non-stick pan when you are mashing.
