OATMEAL CRAISIN COOKIES

The gentle warmth that the cinnamon and nutmeg add with the hearty oats ALMOST makes these cookies feel like a real life HUG! A lot of us are stressed, worried, worked up and withdrawing from social interaction. Give yourself a break and make a comforting classic that can last all week (if your will power can).

INGREDIENTS

1/4c butter, softened
1/4c almond butter, room temp (you could sub just about any nut butter but peanut would definitely change the flavor)
1/4c sugar
1/4c brown sugar
1/2t vanilla
1 egg, room temp
1/2c flour
1/2c oats
1/4t baking powder
1/4t baking soda
1/8t salt
1/4t cinnamon – optional
1/8t nutmeg – optional
1/4c dried cranberries (you can use just about any dried fruit you want here just chop them up to be about the size of a craisin)

INSTRUCTIONS

Preheat oven to 325°F. Cream together butters and sugars until smooth. Add vanilla and egg, incorporate. Add flour, oats, baking powder, baking soda, salt, cinnamon and nutmeg. Mix until just brought together. Fold in cranberries. Makes 6-8 large or 12-14 small cookies. Bake for 10-15 minutes.
