BRANDON’S CARNE ASADA TACOS WITH CARROT + RADISH SLAW

In high school, my husband and his friends all worked at Moe’s (‘Welcome to Moe’s!’) and recently, he got this sudden craving for their carne asada tacos. So he went in to a group texting frenzy with the guys and this was the result.

INGREDIENTS

Sauce:
2T rice wine vinegar
2T grapeseed oil
1 garlic clove chopped
Pinch of salt
1t honey
1t smoked paprika
1/4t soy sauce

3/4lb flank steak

Slaw:
1 carrot, shredded
3 radishes, shredded
1 green onion, chopped
1/2 lime, juiced
Salt and pepper

INSTRUCTIONS

Whisk together sauce ingredients and let sit. Pound steak out a little bit then chop really thin against the grain. Heat a cast iron skillet to med-high add a little oil then the steak, move it around a bit for a minute or two then dump in the sauce. Keep stirring until the sauce is completely coating the steak and it is cooked.
Toss slaw ingredients to combine and let sit for a few minutes.

Add any other toppings you’d like. Avocado, cheese, tomato, hot sauce, whatevs.

ENJOY!
