CUCUMBER PICO

Bright, fresh and the perfect topping for your Taco Tuesday! On a trip to Belize last year, we had some pico with cucumber and it was THE BEST! It was the perfect burst of freshness without having to add any cilantro (which is clutch for those of us who think it tastes like soap). Ever since, Brandon requests this pico every time we make tacos.

INGREDIENTS

1 lime, zested and juiced
Dash of red wine vinegar – optional
1/2 cucumber, chopped small
1 tomato, chopped small
1/4 red onion, chopped small
1 green onion, chopped

INSTRUCTIONS

Put lime zest and juice, vinegar and a pinch of salt and pepper in a mason jar and give it a little swirl. Pour in cucumber, tomato red onion and green onion, secure the lid, shake it up and serve. Its usually better after a few hours in the fridge as the veggies soak up all the lime juice and vinegar.
