HUMMINGBIRD STEELCUT OATS WITH GREEK YOGURT/CREAM CHEESE ICING

I love eating oats for breakfast but its also really important to me to get some veggies in during my first meal too. This is one of my favorite ways to do just that!

INGREDIENTS

Oats:
1/2c milk of your choice
1/2c coconut water or just regular water
1 large carrot, shredded
1/2c steel cut oats
Small pinch of clove or allspice
1/8t ground ginger
1/4t cinnamon
1 banana, small chop
1/4c pineapple, small chop (tidbits work just fine)

Icing:
2T cream cheese, room temp
1/3c greek yogurt
1t maple syrup

INSTRUCTIONS

Heat the milk and water until simmering, add carrot, oats, clove, ginger, cinnamon and a small pinch of salt and cook on medium for about 10 minutes, carrots are cooked and oats are al dente. Remove from heat, add banana, pineapple and walnuts.  Cream together icing ingredients and top oats.
