Fluffy, delicate coconut muffins with bits of mango and a touch of allspice to bring out those delicious tropical flavors. So flavorful with only just a touch of sweetness. A perfect little treat.


1c desiccated, unsweetened coconut, divided 1/2c/1/2c
1 1/2c flour
2 1/2t baking powder
1/4t salt
Pinch of allspice
3/4c coconut water
2 eggs
1/3c sugar
1/2t vanilla extract
1/4c butter, melted
1 mango, peeled and cubed


Preheat oven to 425°F. In a large bowl, whisk together 1/2c coconut, flour, baking powder, salt and allspice. Pour in coconut water, eggs and sugar, stir to combine then pour in vanilla and butter, whisk until smooth. Fold in the mango chunks then scoop the batter into 12 well greased muffin cups. Heavily sprinkle the tops with the remaining 1/2c coconut then place in the oven, reduce the temp to 375°F and bake for 25 minutes.
