Strips of chicken, broccoli and red bell pepper tossed in a slightly sweet-slightly spicy sesame soy sauce then roasted up and served over rice. So delicious, so easy, so healthy. A perfect weeknight meal!
INGREDIENTS – serves 2
3T soy sauce
3T sesame oil
3T honey
1t ground ginger
1t garlic powder
Pinch of red pepper flakes
1 chicken breast, 1/2″ slices
1 broccoli head, cut into florets
1/2 red bell pepper, sliced
INSTRUCTIONS
Preheat the oven to 375°F.
In a large bowl, whisk together soy sauce, sesame oil, honey, ginger, garlic powder and red pepper flakes. Add the chicken, broccoli and bell pepper then stir to coat. Spread out on a large parchment-lined baking sheet, pouring any remaining sauce over the top and roast for 15 minutes. Sprinkle sesame seeds over the top and stir it all together and spread back out again, making sure the chicken pieces get flipped over. Roast for another 5-10 minutes, until the sauce on the pan is just starting to get a little brown. Give it a quick toss to soak up some more sauce then serve over rice.
