Mini sweet peppers and ground turkey sautéed with onion, garlic and lots of herbs, simmered in marinara then tossed in tender pasta. Fast, simple and full of flavor. A perfect weeknight meal.
INGREDIENTS – serves 3-4
1/2 box of your favorite pasta
2T olive oil
1/2 red onion, chopped
6 mini sweet peppers or 1 bell pepper, chopped
1/2lb ground turkey, sausage or beef
3 garlic cloves, chopped
1/4t thyme
1/4t oregano
1/2t dried basil
1/4t salt
1/4t black pepper
1/8t red pepper flakes
1 1/2c marinara sauce
1/2c broth or water
Parmesan, grated
INSTRUCTIONS
Cook your pasta in boiling salted water for however long the box instructions say.
Bring a large skillet to medium heat. Sauté onion and peppers in olive oil for 1-2 minutes then add turkey, garlic, thyme, oregano, basil, salt, pepper and red pepper flakes. Stir to combine, breaking up the meat as you go. Once the meat is mostly cooked through, pour in marinara and water, stir then bring to a simmer, reduce the heat a little bit and let simmer lightly for about 8 minutes. Add the pasta and toss to coat. Serve up and sprinkle with parmesan.
