SPRING SALAD with HERBY GOAT CHEESE DRESSING

Fresh herbs, crunchy radish slices and pops of greens peas over leafy greens drizzled with the most flavorful goat cheese, lemon dressing that is absolutely loaded with mint and dill. So full of all the springtime vibes your body is craving right now!

INGREDIENTS – serves 2-4

2oz goat cheese
1/4c mint, plus more to sprinkle on top
1/4c dill, plus more to sprinkle on top
1/2 lemon, juiced
Salt + pepper
1t maple syrup
2T olive oil

4-6c your fav greens
2 radishes, thin sliced
1/3c peas, fresh + blanched or frozen + defrosted

INSTRUCTIONS

Using a small food processor or immersion blender, whip the goat cheese, herbs, lemon juice, a pinch of salt and pepper, maple syrup and olive oil together until the herbs are chopped small and the dressing is smooth and creamy.

Spread out the greens in a large bowl, top with radishes and peas then tear some left over herbs over the top. Drizzle with dressing or serve on the side.
