Flavorful, spicy and so much fun! Chicken, onions, celery and green bell peppers heavily seasoned with a delicious cajun spice blend, deglazed with a little white wine then tossed with pasta and cheese. So freaking good. You’re going to love it.
INGREDIENTS – serves 4
1/2-16oz pkg pasta (your fav shape)
1/4t salt
2t garlic powder
1 1/2t onion powder
2t paprika
1/2t black pepper
1t thyme
1 1/2t oregano
1/4t cayenne
1/4c olive oil, seperated 2T/2T
1 chicken breast, small chunks
1/2 onion, sliced
1/2 green bell pepper, sliced
2-3 celery stalks, sliced
1/4c white wine
1/4c pasta water
1/4c cream cheese
1/4c parmesan, grated, plus more for garnish
Parsley, garnish
INSTRUCTIONS
Cook pasta in a pot of boiling salted water for 1 minutes less than the package instructions, reserving 1/4c pasta water before dumping.
In a small dish, stir together salt, garlic powder, onion powder, paprika, black pepper, thyme, oregano and cayenne.
Bring a large skillet to medium-med-high heat. Pour in 2T olive oil then the chicken along with half of the seasoning mix. Cook chicken for 5-7 minutes until cooked through, then remove to a bowl or plate and set aside. Dump in the onion, bell pepper, celery, the rest of the seasoning and remaining olive oil. Cook for 1-2 minutes then deglaze with the white wine (pour it in a scrape the brown goodness off the bottom), cook for another 3-4 minutes until the veg is softened and most of the liquid has cooked down. Turn off the heat then pour in the pasta water, pasta and cream cheese then sprinkle the parm on top. Stir until everything is combined. Top with a little extra parm and parsley then serve.
