Coconut flakes, peanuts and walnuts roasted up in an oh-so-flavorful vanilla honey that caramelizes just enough to give this delicious snack just a touch of vanilla-y sweetness. Whether you’re hitting the trail or just need a healthy snack at home, this nut mix is the BEST.


1/4c honey
1/4t salt
1T vanilla bean paste, sub extract
2T neutral oil (I used grapeseed)
1c walnuts, raw
2c peanuts, raw
1/2c coconut flakes (the big flakes)


Preheat oven to 325°F. In a large bowl, stir together honey, salt, vanilla and oil. Pour in walnut and peanuts and toss to coat. Dump out on a parchment lined baking sheet then spread it out. Roast for 15 minutes, give it a stir, roast another 15 minutes, sprinkle coconut flakes over the top, stir again then roast for a final 5 minutes. Allow to cool before storing or serving.
