Tender, lightly charred broccoli florets tossed in fresh pesto then finished with torn burrata. An incredibly fresh and flavorful combination that I just can’t get enough of! So delicious!

2-3 broccoli heads, cut into florets
1/8t salt
1/4t black pepper
1/4t red pepper flakes (to taste)
3T olive oil

2T pesto
1 small burrata ball

Preheat oven to 425°F. Toss broccoli in salt, pepper, red pepper flakes and olive oil. Spread it all out on a parchment-lined baking sheet and roast for 15-20 minutes.

Dump roasted broccoli in a bowl, pour pesto over the top and stir to coat. Tear burrata up over the top and serve.
