A deliciously spiced, slightly sweet banana bread loaded with pineapple, carrots, walnuts and coconut. Its crunchy, its aromatic, its so freaking good!
INGREDIENTS – serves 8-12
2 med aging banana
2 egg
1t vanilla
1/2c brown sugar
1c flour
2t baking powder
1t baking soda
1/4t salt
1t cinnamon
1/4t ginger
1/8t allspice
1/8t nutmeg
1 can pineapple tidbits
1c carrots, shredded (about 1-2)
1c walnuts, chopped + toasted
1/2c shredded coconut, separated 1/4c/1/4c
INSTRUCTIONS
Preheat oven to 375°F. In a large bowl (or stand mixer), mash the bananas with a fork or potato masher. Whisk in eggs, vanilla and brown sugar then add flour, baking powder, baking soda, salt, cinnamon, ginger, allspice and nutmeg. Fold in the pineapple, carrots, walnuts and 1/4c coconut. Pour into a greased and parchment lined loaf pan. Sprinkle the remaining 1/4c coconut over the top and lightly press it into the batter. Bake for 45 minutes, tent with foil so the coconut doesn’t burn then bake for another 15 minutes. Allow to cool.
