Fresh lettuce, juicy tomatoes and crispy bacon piled high, drizzled with a simple tangy chive vinaigrette finished with garlicky breadcrumbs. An easy and delicious twist on a fabulously classic sandwich. Perfect on the side with your favorite protein or just as is for a light lunch. So good!

INGREDIENTS – serves 2

4-6 bacon slices
1/2c breadcrumbs
1/4t garlic powder

2T chives, chopped
2T white balsamic vinegar
1t maple syrup or honey
3T olive oil
Salt and pepper

1 head butter or bibb lettuce
1 tomato, chopped


Fry the bacon in a large skillet until cooked and crisp then remove to a paper towel lined plate, reserve about 2T of the fat in the pan. (If you don’t have enough fat just add some olive oil or butter). Pour breadcrumbs and garlic powder in the pan and stir until toasted. Remove and set aside to cool.

While they cool, make the dressing. Add chives, vinegar, maple, olive oil and a pinch of salt and pepper to a jar, secure the lid then shake until combined.

Chop up the bacon then assemble the salad. Lay out the lettuce, distribute tomatoes and bacon then drizzle with dressing and smother it all with breadcrumbs. So delicious!
