PRETZEL CHICKEN BITES with HOT MAPLE MUSTARD

Pretzel breaded baked chicken nuggets drizzled with a spicy, maple syrup, dijon mustard sauce. Holy moly these are DELICIOUS! A perfect snack, appetizer or main dish. You are going to love these!

INGREDIENTS – serves 3-4

1/4c flour
2 eggs
1-2t hot sauce (to taste)
3/4c pretzel crumbs (pulse whole pretzels in a food processor)
1/4t salt
1/2t thyme
1/4t garlic powder
1/4t black pepper
2 chicken breasts, roughly 2″ pieces

1/2c maple syrup
1/4c dijon mustard
1/2t red pepper flakes

INSTRUCTIONS

Preheat the oven to 375F.

Assemble 3 bowls, pour flour in the first, whisk the eggs and hot sauce together in the second and stir together the pretzel crumbs, salt, thyme, garlic powder and black pepper to the third. Toss each chicken piece first in the flour then eggs then breadcrumbs to coat then place them on a foil lined baking sheet (preferably with a wire rack). Bake for 20-25 minutes.

While they bake, make the hot maple mustard. Stir maple, dijon and red pepper flakes together in a small pot and bring to a simmer for 1 minute. Pour into a small serving bowl and allow to cool to room temp.

Drizzle or dunk the chicken nuggets in the sauce.
