1/4c butter, melted
1 1/2c flour
1 1/2t baking powder
1 1/2c diced apple
Preheat oven to 425°F. In a large bowl, stir together butter, sugar, egg, vanilla and milk then sift in the flour, baking powder, salt, cinnamon and nutmeg. Stir it all together, then fold in the apples. Spoon/scoop out 12 muffins in a well greased muffin tin. Place in the oven, reduce the temp to 375°F and bake for 18-20 minutes.
