TORTELLINI with SAUSAGE + SHROOMS

Delicate cheese tortellini combined with crispy sausage, savory mushrooms and lots of sage, thyme and garlic in a light parmesan sauce. So delicious and flavorful! A perfect, easy dinner.

INGREDIENTS – serves 2-3

1 – 9oz pkg tortellini
1/4lb ground sausage (I use hot)
10-12 crimini mushrooms, sliced
1-2T olive oil, if needed
1-2 garlic cloves, minced
1t sage
1/4t thyme
1/8t salt
Red pepper flakes, to taste
1/4c reserved pasta water
1/4c parmesan, shredded

Parmesan and parsley – to garnish

INSTRUCTIONS

Cook pasta 2 minutes less than package instructions in salted boiling water, reserving 1/4c pasta water before dumping it.

Cook sausage in a large skillet until its starts to get crispy and is generally cooked through. Add mushrooms and olive oil (if your sausage isn’t super fatty and your pan is dry), stir and allow to cook for about a minute then stir in garlic, sage, thyme, salt and a pinch of red pepper flakes, cook for another 2-3 minutes. Turn off the heat, pour in pasta water then tortellinis then sprinkle the parm over the top and toss to until its melted into the sauce and the pasta is coated and mixed with the sausage and mushrooms. Finish with a little extra parm and parsley.
