A flavorful and healthy meal for any night of the week. Chicken slow cooked in fire roasted tomatoes and lots of spices, just throw everything in the crock pot and let it cook all day long. The chicken completely falls apart and soaks up all the delicious sauce. So yummy and great for a crowd!
INGREDIENTS – serves 4-5
1-15oz can fire roasted tomatoes
3/4t garlic powder
1/2t chili powder
1/2t cumin
1/4t onion powder
1/4t red pepper flakes
1/2t salt
1c water (I just fill up the can about halfway and swirl it to get any remaining tomatoes)
3 chicken breasts, boneless skinless or 6-8 boneless skinless thighs
INSTRUCTIONS
Stir together everything but the chicken in a crockpot. Add the chicken, wiggle it a little to make sure its covered with the sauce. Cook on high for 8 hours or low for 12 hours. Shred using a couple of forks then serve with your favorite tortillas or some rice and beans or both!
