One of the tastiest on-the-go breakfasts around! Sauteed kale and cheddary eggs wrapped up in a perfect crispy dough. Incredible straight out of the oven and absolutely delicious warmed up for an on-the-go breakfast any day of the week. You’re going to love having these stashed in the freezer!
INGREDIENTS
1 pizza dough, room temp, either from the supermarket deli or 1/3 my recipe
2T olive oil or butter
2-3c kale, sliced thin
6 eggs
1/2c cheddar, shredded
INSTRUCTIONS
Preheat oven to 450°F. Line a large sheet pan with parchment paper. Divide the dough in 3 pieces, stretch in 3 oblong somewhat symmetrical 3-4″ x 10-12″ shapes. Set aside.
Saute kale in olive oil on medium with a little salt and pepper for about 3 minutes. Thoroughly whisk eggs in a large bowl then pour in with the kale. Stir until mostly cooked but still looks a little wet, then sprinkle in the cheese, reserving just a little for the tops, then continue to cook until the eggs are done.
Divide the eggs among the 3 dough shapes, placing the eggs only on 1/2 so you can then fold the other half of the dough over the top. Pinch all the way around to seal the sides. Drizzle with a little olive oil then sprinkle with the leftover cheese. Bake for 20 minutes.
