GRILLED CORN with CHILI MISO BUTTER

Bring your barbecue game to the next level with this incredibly flavorful side. Slightly charred sweet corn slathered in a spicy, salty, umami packed butter. Oh my goodness this is so freaking good!

INGREDIENTS – serves 2-3

3 cobs of corn, husks removed and halved

3T butter, softened
2t miso
1/4t red pepper flakes

INSTRUCTION

Preheat a grill or grill pan to medium. Grill the cobs directly on the grill, rotating every few minutes until a little charred all the way around.

Meanwhile, in a small bowl, mix butter, miso and red pepper flakes together. I like to use a rubber spatula to really mash it all up. Spread over grilled corn.
