A delicious addition to any dinner this summer! Perfectly grilled zucchini with a squeeze of lemon, salty crumbled feta and fresh fragrant dill to finish it off. So good and so simple!

INGREDIENTS – serves 2

2 large zucchini, halved lengthwise
2T olive oil
1/4t aleppo pepper (or a pinch of red pepper flakes)

1/2 lemon, cut in wedges
2T fresh dill, roughly chopped
1/4c feta, crumbled


Preheat a grill or grill pan to medium. Sprinkle zucchini with a little salt and pepper, the aleppo pepper and drizzle with olive oil. Toss to coat. Grill about 4 minutes on each side then remove to a plate. Squeeze the lemon over to taste then distribute dill and feta over the top and serve.
