BUFFALO CHICKEN BOWLS

Whether you’re looking for a lunch to meal prep next week or just need to scratch that buffalo chicken itch, this one is for you! Nutty brown rice, crispy romaine and celery, fresh tomatoes and a little cheese piled high in a bowl with spicy buffalo chicken! This one is so delicious and easy to make on the fly for lunch or prep ahead of time.

INGREDIENTS – serves 2

1-2c chicken, cooked and chopped (rotisserie or roast 1 breast 25 min @ 375F)
2-4T your favorite buffalo sauce, amount depending on how spicy you like it

2c rice, cooked (I like brown rice but whatever you like)
1 head of romaine, chopped
1 celery stalk, thinly sliced
1/3c tomatoes, chopped
1/4c blue cheese or cheddar

Ranch or Blue cheese dressing

INSTRUCTIONS

Toss chicken in buffalo sauce, set aside.

In 2 big dinner bowls, place about a 1c scoop of rice in each. Top with the romaine, celery, tomatoes, cheese and buffalo chicken. Drizzle on some ranch or blue cheese dressing.
