This simple little soup also known as ‘Vichyssoise’ is just so delightfully perfect. Lightly sauteed leeks simmered with tender potatoes then blended into a smooth, creamy soup. Its delicate and so delicious. Sip it cold or warm it up, either way your going to love it!

INGREDIENTS – serves 4

1 leek, chopped
1/2 onion, chopped
1T butter or olive oil
1/2t salt
4 medium yukon gold potatoes or 2 russets, cubed
4c broth or water
1/4t white pepper
1c milk


Bring a large pot to med-high heat. Saute leeks and onion in butter and salt until soft then pour in broth and potatoes. Bring to a boil then reduce to a simmer for 20 minutes. Remove from the heat. Add white pepper then blend until smooth. Pour in the milk and stir together. Salt to taste.
