Sagey thyme meatballs with garlicky delicata squash and crispy broccolini all roasted on one sheet pan. This delicious weeknight dinner is full of cozy flavor and a total a cinch to make!
INGREDIENTS – serves 2
1/2lb ground meat (I like chicken or turkey but use whatever you’d like)
2T parmesan, grated
2T ricotta
1/3c breadcrumbs
1/4t garlic powder, plus a sprinkle
1/2t ground sage
1/4t dried thyme
1/8t pepper
Red pepper flakes
1 delicata squash, halved seeded and 1/4″ slice
1 bunch broccolini
2T olive oil, divided 1T/1T
Salt and pepper
INSTRUCTIONS
Preheat the oven to 375°F. In a large bowl, gently mix together the ground meat, parmesan, ricotta, breadcrumbs, garlic powder, sage, thyme and a pinch of salt, black pepper and red pepper flakes. Scoop into balls, roll between your hands to smooth if you’d like then place on a parchment lined sheet pan.
Toss squash in 1T olive oil, a pinch of salt and pepper and a sprinkle of garlic powder. Spread it out around the meatballs and bake for 10 minutes. Meanwhile, toss the broccolini in 1T olive oil and a pinch of salt and pepper. After the 10 minutes are up, flip the squash, add the broccolini on top and bake for another 10 minutes.
