Juicy pan-seared pork chops with a delicious apple mustard shallot sauce. This quick + easy main dish is PERFECT for Fall and just what you need to add some flavor to your weeknight dinner plans!
INGREDIENTS – serves 2
2 thin cut pork chops
Salt + Pepper
2-3T olive oil
1 shallot, 1/8″ slice (sub 1/2 regular onion)
1 apple, 1/8″ slice
1/4t thyme
1/4c white wine/apple cider
2T stone ground mustard (any kind but yellow will work)
1/3c water/broth
INSTRUCTIONS
Bring a large skillet to med-high heat. Sprinkle the pork chops with a little salt + pepper then sear in olive oil 2-3 minutes on each side. Take the chops out of the pan and set aside. Saute the shallot, apple + thyme with a little salt + pepper for 1-2 minutes until just starting to get soft. Deglaze with wine then add the mustard + water. Stir to combine then nestle the pork chop in the sauce. Bring to a simmer + cover for 5 minutes.
