CRANBERRY WALNUT SALAD

Sweet + tangy cranberries, crunchy walnuts + funky blue cheese with a balsamic vinaigrette is one of my ALL TIME FAVORITE salad combinations. Make it a complete meal with some creamy white beans + add some toasted seeds because they bring every salad to the next level with that flavorful texture! Throw it together in minutes for an excellent timesaving weeknight dinner.

INGREDIENTS – serves 2

4-5c mixed greens
3/4c white beans, cooked (about half a drained can)
1/4c walnuts, toasted
1/4c dried cranberries
1/4c blue cheese
1 green onion, sliced
2T sunflower seeds, toasted
2T pumpkin seeds, toasted

Dressing:
2T balsamic vinegar
1/2t dijon mustard
3T olive oil
Salt + pepper

INSTRUCTIONS

Add mixed greens to a large bowl. Top with white beans, walnuts, cranberries, blue cheese, green onion + seeds.

Whisk together the dressing (or throw everything in a jar and shake), drizzle over the salad and toss.
