STRAWBERRY RASPBERRY HAND PIES

Layers of flakey goodness filled with a sweet + slightly tangy jam then coated in a beautiful berry icing. Make em from scratch start to finish or I’ve got some easy cheats to throw them together in no time. These are the perfect little Valentine’s Day treat whether you can actually save some to share or eat them all yourself! They’re just so good!

INGREDIENTS – makes 10-12

FROM SCRATCH:
2c pastry or all-purpose flour
1/2t salt
3/4c butter, cubed
1/4t white vinegar
6-8T ice water

5oz, frozen strawberries (sub any other berry)
4oz frozen raspberries (sub any other berry)
1/2 lemon, juiced
2T honey or maple
1/2c water

1 egg, whisked
1T water

1 1/2c powdered sugar

SHORTCUT:
2 refrigerated pre-made pie dough packages

Your favorite berry jam

1 egg, whisked
1T water

1 1/2c powdered sugar

INSTRUCTIONS

Put flour, salt + butter in the food processor. Pulse 5-10 times until everything is mixed up and the butter is chopped up into small pieces. Add vinegar then ice water until you can grab a bit and it sticks together forming a clump. Dump it all out, form disk, wrap in plastic and put it in the fridge for an hour.

Meanwhile, bring berries, lemon juice, honey + water to a boil, reduce to a simmer and cook for 30+min until its nice and thick and the apples have broken down a bit. Let cool.

(SHORTCUTTERS START HERE!)
Preheat oven to 475°F. 

Roll out the dough to about 1/4in and cut out hearts or circles (whatever shape you want). Whisk together the egg and water. Brush one of the hearts with the egg wash, put 1t of the berry jam in the center, top with another circle and press the edges around with the tines of a fork. Brush with more egg wash, bake for 8 minutes.

While they cool, whisk together 1-2T of leftover jam with the powdered sugar. If you want it looser (lighter in color too) add 1t of milk or water at a time, whisking until you get your desired consistency, then dip the pastries in the icing or drizzle over the top.
