BREAKFAST POTATOES

Quick + easy is a must in the mornings not because I’m in a rush to get out the door, I’m just freaking hungry. These roasted potatoes are seriously the best because I can throw them together in minutes then just set the timer and enjoy my coffee! They’re a little spicy + salty with just a hint of smoke. SO DELICIOUS!

INGREDIENTS – serves 2

4 small potatoes, 1/4″ slices (see note)
2T olive oil
1/4t salt
1/4t chili powder
1/4t smoked paprika
1/4t garlic powder
1/4t black pepper
Dash of cayenne or pinch of red pepper flakes

INSTRUCTIONS

Preheat oven to 375°F.

Toss potatoes in olive oil and spices. Distribute on a parchment lined baking sheet so they aren’t touching and roast for 10 minutes. Flip the potatoes then back in the oven for another 8-10 minutes. Sprinkle with a little sea salt and serve.

ENJOY!

Note:
I like to use yukon gold potatoes for this but any (even sweet potatoes) will work, just cut the potato in half before slicing into 1/4″ so they don’t take longer to cook.
