These wraps are the perfect 5 minute, pantry pull lunch for anyone! The Spicy Peanut Sauce is kicked up with fresh ginger and sriracha that is expertly balanced by the peanut butter and a touch of honey. Delicious, nutritious and FAST. A foolproof combination!

1/2 can water chestnuts, chopped (if you don’t have any, just sub more chicken/chickpeas)
1c chicken, chopped
2T peanut butter
1T soy sauce
1t grated ginger or 1/4t ground
1t toasted sesame oil (or not toasted) – optional
1/2t sriracha – optional or more up to you
1/1c cabbage, shredded
1/4c carrot, shredded or thin sliced
1/2 lime, juiced
Whisk peanut butter, soy sauce, honey, ginger, oil, water and sriracha together. Add chicken and water chestnuts and stir to combine. In a separate bowl, toss cabbage, carrot and lime juice with a little pinch of salt. Divide slaw, avocado and chicken mixture on 2 wraps (warm them up a little on the stove if they aren’t pliable enough). Add more sriracha if you want and wrap them up.
