Being stuck at home right now, a lot of us are resorting to bad eating habits and this classic hummus is here to HELP! Just throw some tahini, lemon, garlic and olive oil in the food processor with some chickpeas and give it a whirl. You automatically have a perfectly healthy snack or a quick and easy lunch wrap or bowl.
INGREDIENTS
1 1/2c cooked chickpeas/1 can drained and rinsed
3T tahini
1 garlic clove, smashed
1/2 lemon, zested and juiced
1/8t cumin – optional
1/4t salt
1/4t pepper
2T olive oil
2T cold water
INSTRUCTIONS
Add chickpeas, tahini, garlic, lemon zest and juice, cumin, salt and pepper to a food processor. Blend until mostly combined. Pour in olive oil and puree until smooth.
